Gastronomie

Fine dining can make all the difference to a holiday or hotel stay, and Naïade Resorts takes great pride in ensuring that their restaurants rival or even exceed the best.

Since May 2006, Stephane Jean has been Naïade Resorts’ Corporate Chef. He is a highly original and creative chef, who works with his colleagues to produce a fusion cuisine that highlights the best of world gastronomy.

The basis of his cuisine is resolutely French, but fused with touches of Indian spices and Asian cooking styles.

Naïade Resorts’ main restaurants specialise in themed buffets, to bring guests the flavours of the various cultures that have influenced the Indian Ocean region.

Indouchine at Beau Rivage is Naïade Resorts’ flagship restaurant. It shows superbly how French haute cuisine can integrate other flavours and particularly the saveurs des iles, island savours.

A la carte and beach restaurants offer mouth-watering seafood dishes, often a simple cuisine with Mediterranean touches.

Some bars and restaurants have special afternoon teas, in the best British, Chinese or Japanese tradition.

Mauritius
Beau Rivage
  • Rive Gauche - A cultural voyage
The main restaurant is set under a high, beamed thatched roof, open to the sides, with wonderful views of the lagoon and the swimming pool, absolutely magnificent when it and its palm trees are lit up at night. It is open for breakfast and dinner, when it serves a variety of tables d'hôte, buffets and gala dinners. The themed buffets conjure up all the magic of Asia, Africa and Mauritius.
  • La Méditerranée – A corner of paradise
Le Mediterranée has a relaxed air, right by the beach, feet in the sand. This is the place to try local, Mauritian dishes, as well as Mediterranean specialities such as pizzas and huge salads. Open for lunch and dinner.
  • Indouchine – A new approach to French cuisine
Under a buttressed wooden ceiling, looking out towards the lagoon, Indouchine is synonymous with the best of fine dining, where French haute cuisine is flavoured with little Indian and Chinese touches to produce pure gastronomic delight, a pleasure even for those wary of spices. The Chef's speciality is pan-fried foie gras that has never seemed so wonderful, and the Chocolate soufflé is divine. This is personalised service as it should be. All guests are greeted by name and what attention to detail - a little sorbet, so mouth-watering that you wish it would never end, is served with the compliments of the house, to cleanse the palate before the desert.
  • Le Langoustier – A sea odyssey
This elegant seafood restaurant is set on its own terrace, overlooking the pool and the lagoon beyond and is perfect for a romantic evening. The jewel in the seafood crown is the special four-course lobster extravaganza, served once a week.
  • Bar Club Savane – Into Africa

  • Monsoon Lounge & Bar – Oriental charm
The bar is next to the swimming pool, facing the sea, and a popular meeting place. The atmosphere is one of colonial luxury, with furniture and furbishing inspired by the East Indies trade route. Guests sit here in the evening to watch the evening entertainment.
Legends
Balance and equilibrium, are central to Feng Shui.  Energy enters and the flow has to be perfectly harmonious, so that Chi is used effectively. Both the environment and cuisine of Legends respect this natural law.
Each of the 5 elements of wood, fire, earth, metal and water has its own colour, time, properties – and taste. The acidity, bitterness, sweetness, spiciness and saltiness in ingredients are combined to bring out their qualities and to provide the energy needed according to the time of day.
